L28 Culinary Platform, a concept restaurant and culinary platform created by Israel’s leading innovative tech NGO, Start-Up Nation Central, has taken its mission of connecting the world to Israeli innovation into the culinary space. Giving the reins to a new “start-up chef” every six months – Israel’s first chef accelerator– L28 announces their third rotating chef, Naifa Mulla, a Druze Israeli from Yarka, a village in Northern Israel.
Previous head chef, Gabriel Israel, whom is also the Culinary Director at L28, passed the torch to his successor, chef Nafia Mulla. Bringing her contemporary take on traditional Druze dishes, specifically flavors from Yarka, Mulla’s menu explores how Druze cuisine fits into the layered tapestry of Israel’s emerging culinary scene.
Naifa Mulla, a mother of two whose professional career started as a banker who then switched to study under legendary Israeli chef Haim Cohen, is given a six-month residency at L28 starting October 22nd, experiencing first-hand what it takes to run her own kitchen.
The L28 menu includes Mulla’s take on traditional Druze cuisine, with a take on kibbeh nayeh (chopped lamb tartare with bulgur, harissa and pine nuts), ‘malfouf’ (stuffed cabbage filled with beef and rice with a lamb demi-glaze) and seafood shish barak (homemade drumfish dumplings in a bouillabaisse soup). Mulla’s menu takes inspiration from her upbringing in Yarka.
Druze culture is known for its traditional, flavourful food and warm hospitality, and Mulla’s dishes at L28 reflect this notion, with a contemporary twist. Mulla has also crafted a special wine menu with local Israeli wines from the Galilee as well as a crafted cocktail menu using signature spices.
